The production of Parmigiano Reggiano cheese, an icon of Italian gastronomy, dates back to over 800 years ago when monks discovered a way to preserve the cheese made from the local milk for lengthy periods.
As part of your experience, you will visit an award-winning Parmigiano Reggiano producer based in the hills between Bologna and Modena and one of the handful of producers making Parmesan from organic milk and milk from the Modena White Cow. This is a truly artisan producer making only 8 wheels of the finest Parmesan per day and supplying the world’s top Michelin Star chefs and most iconic delicatessens.

This experience requires a very early start in the morning in order to ensure that you see the entire process of making the authentic Parmigiano Reggiano DOP, from its humble beginnings as creamy milk supplied by surrounding dairy farms, right through to the glorious golden wheels of the final product which bear the seal of the Parmigiano Reggiano Consortium. You will stop for breakfast during the cheese’s ‘resting period’ and visit the beautiful Modena White Cows at the end of the tour.
You will discover why the production of this revered cheese is limited to only a limited area in the Emilia Romagna Region and why its maturation times are so much longer than most other cheeses. You will also understand why this magnificent cheese can be stored and matured for several years having been made with only three ingredients and without any sort of preservatives. Finally, you will learn why each wheel is different and how the cheese is made in the same way as 800 years ago, without the use of modern machinery.
As part of your PARMIGIANO REGGIANO experience, you will taste the cheese at the various stages of maturation (including the maturations of up to 86 months, exclusive to this dairy and subject to availability) and with your gastronomy guide, learn the basics of tasting the cheese using a complete sensory analysis. You will also have an opportunity to taste the Ricotta cheese produced by the same dairy and some good local wine.
You will be accompanied throughout your experience by an expert bilingual gastronomy guide. (English, German, French only. Other languages can be provided on request).
