For the discerning gourmet, wine lover or food professional, Yummy Italy offers you a unique tasting experience.
First we will introduce you to the Emilia Romagna region's agricultural history, its food and wine traditions and provide you with an overview of the various PDO (Protected Denomination of Origin) and PGI (Protected Geographical Indication) products, how they are certified and why their certification is important. We will explain their differences and how to recognise products belonging to the various certifications.
Then we will explain the various tasting techniques and the way our tongues, noses and retronasal sensors work to taste this unique production.
Together with a qualified Balsamic Vinegar taster in the historic setting of a vinegar attic, surrounded by hundred-year-old barrels and by candle-light, you will be guided through an in-depth visual, olfactory, taste and retronasal analysis of a series of PDO and PGI vinegars of various maturations from an off-the-shelf supermarket product, to a 120-year old vinegar. You will also test your newly-acquired tasting skills by trying to recognise ‘imposter’ products.
You will then have the opportunity to pair the various maturations of vinegar with 24 and 36 month old mountain Parmesan cheeses, freshly-made local ricotta, a selection of other Italian cheeses and dessert.
This is an experience particularly suited to those who are particularly interested in tasting techniques and acquiring an in-depth insight into his unique product, as well as those already have a basic overview of the production methods of Balsamic Vinegar. It provides an excellent opportunity to deepen one’s understanding of this extraordinary product. It also provides the groundwork for chefs and other food professionals to analyse and experiment with new and innovative food pairings.
